Overnight Oats
This is a free-styling option, with only my guideline – use whatever nuts, dried fruits and seeds you have at hand.
1 cup organic oats
1 tablespoon chia seeds
1 handful chopped raw nuts (I use pecans or almonds)
2 tablespoons chopped dried fruit (I use apricots and cranberries)
2 tablespoons raw seeds (I use pumpkin, sunflower and hemp)
1 tablespoon of superfood powder – raw cocoa, maca, baobab, açai or a favourite
1-2 tablespoons maple syrup (optional)
2 teaspoons cinnamon powder
nutmeg and ground ginger (optional extras)
1 apple grated
½ litre or so of your favourite milk (I use almond or oat)
Combine all ingredients well, except milk, in a glass bowl or plastic box with a lid then cover with milk, stir and make sure it is completely covered in milk, or it will be too dry. put on lid and leave in fridge overnight. Serve with fruit, fresh or stewed, yogurt, toasted seeds or whatever takes your fancy.
Layer up in jars and keep for up to 2 days ready to go!!
